A fajita refers to a term in the Mexican cooking, by which grilled meat served in a taco or tortilla. Originally, the term referred to meat strips used in the dish 'skirt steak'. Today fajitas are made with everything from chicken to pork to shrimp. In restaurants the meat is often cooked with onions and peppers. Popular condiments are lettuce, guacamole, salsa, cheese and tomato. The first serious study of the history of fajitas was conducted by Homero Recio in 1984, as part of his Master's degree.
